A couple scoops of vanilla protein powder amps up these pancakes with 16 grams of satisfying protein per serving. The powder also sweetens the pancakes enough that there’s no need for syrup.

Ingredients

Cooking spray

4 spray(s)

Complete dry pancake mix

1½ cup(s)

Vanilla whey protein powder

2 scoop(s)

Blueberries

1 cup(s), divided

Instructions

  1. In a medium bowl, stir together the pancake mix, protein powder, and 1 cup of water. Fold in ½ cup of the blueberries.
  2. Coat a nonstick griddle or large nonstick skillet with cooking spray and heat over medium. Scoop the pancake batter by ¼ cupfuls onto the griddle or pan to make 8 pancakes (cook in batches, if necessary). Cook until lightly browned and cooked through, 3 to 4 minutes per side. Sprinkle with the remaining blueberries.
  3. Serving size: 2 pancakes and ⅛ cup blueberries
