It plays with the idea of a mimosa but puts more emphasis on the sparkling wine. And the tiny splash of bitters gives a delicious sophisticated edge. You can use navel, cara cara, or blood oranges—whichever you prefer—just note that the color of your cocktails will vary depending on the citrus you use. If you have it or can find it, use orange-flavored bitters for a real treat. Double or triple the recipe if you're serving a larger group.
