Blistered Shishito Peppers & Serrano Ham

Shishito peppers are small green peppers that are uniquely sweet and hot. Since the seeds are tender, you can eat everything but the stem, making for ultra-simple prep.


Ingredients
Olive oil
2 tsp
Shishito peppers
20 item(s), (about 6 oz)
Kosher salt
¼ tsp
Serrano ham
1 oz, (2 slices)
Lemon wedge
2 wedge(s)
Instructions

In a large skillet, heat the oil over high until very hot. Add the peppers. (The peppers should sizzle when they hit the skillet.) Cook, stirring occasionally, until peppers are blistered in spots but still green, about 3 minutes. Sprinkle with the salt and toss.

Divide the peppers between 2 plates. Tear the ham into thin strips and drape over the peppers. Serve with the lemon wedges.
