This big batch of quinoa will help you meal prep for the week (or beyond). After cooking the quinoa and allowing it to cool to room temperature, you can store it in the refrigerator for 5 days or freeze it for up to 6 months. If freezing, divide it into 1- or 2-cup portions for easy use later. The seasoning is kept very simple (just a little salt) so the quinoa has the greatest versatility; it can easily go into sweet or savory applications.

Instructions

Place quinoa in a sieve; rinse well under cool water. Drain quinoa and place in a medium saucepan. Add water and salt. Bring to a boil. Cover, reduce heat to low, and cook 15 minutes. Remove from heat and let stand 10 minutes before fluffing with a fork.
