This is a fun, savory twist on traditional French toast. Simply toss mashed bananas with some ground cinnamon, then enclose in flatbread along with chopped walnuts. You can definitely omit the nuts if you don't want any crunch in your breakfast. Toast the flatbread in a pan after brushing with egg white, and your toast is all ready to go. It doesn't get much easier than that! Serving with maple syrup alongside is a definite must. Feel free to scale up the ingredients if you want to make this recipe for a crowd. If you use traditional bread slices, just keep in mind that this may affect the recipe's nutritional value.

Flatbread

Mash banana, and mix with cinnamon in a small bowl.

Spread mixture on half of flatbread. Sprinkle walnuts over mixture, then fold flatbread in half.

Beat egg white in a small bowl, then brush it over the outside of the folded flatbread, coating both sides.

In a nonstick pan coated with cooking spray, cook the flatbread, flipping gently, until toasted. Serve immediately with syrup.
