Instructions

  1. Preheat oven to 400°F. Coat an 8-inch square baking dish with cooking spray.
  2. In a large mixing bowl, combine eggs, Swerve, almond milk, applesauce, vanilla, oats, baking powder, and salt. Stir in butterscotch chips and spoon mixture into prepared pan. Smooth into an even layer with the back of a spoon.
  3. Bake for 30 minutes and then slice into 6 pieces. Enjoy as is (or drizzle with optional melted chocolate—not included in Points value).
