Your favorite happy hour appetizer is transformed into a creamy, dreamy dip. We love this served with thick cut celery, carrot chips, and lower-Points wheat crackers.

Ingredients

Cooked shredded chicken breast

2 cup(s)

Buffalo wing sauce

cup(s)

Plain fat free Greek yogurt

½ cup(s)

1% low fat cottage cheese

1 cup(s), preferably whipped or small-curd and blended until smooth

Light cheddar cheese

½ cup(s), shredded, divided

Onion powder

1 tsp

Kosher salt

½ tsp

Blue cheese

cup(s), crumbled, not packed, crumbled

Scallions

1 medium, thinly sliced

Instructions

  1. Preheat your oven to 350°F. Coat a shallow baking pan with cooking spray.
  2. In a medium bowl, stir together the chicken, buffalo sauce, yogurt, cottage cheese, ¼ cup cheddar cheese, onion powder, and kosher salt. Spread into the prepared dish and sprinkle with the remaining ¼ cup cheddar cheese and blue cheese crumbles.
  3. Bake until bubbly and heated through in the center, about 20 to 25 minutes. Garnish with the scallions.
