These well-curated bites include pepper poppers stuffed with bacon-and-herb cream cheese, plus a flexible cast of extras. Feel free to swap in any berries and veggies you like. Though we feature the peppers here as an anchor for make-ahead lunches, they’re also fantastic appetizers for tailgating, block parties, or any casual gathering.

Ingredients

Low fat cream cheese

Plain fat free Greek yogurt

Chives

1 Tbsp, chopped, plus more for garnish

Dill

Cooked thick-sliced bacon

Instructions

  1. In medium bowl, combine cream cheese, yogurt, celery, 1 tbsp chives, dill, salt, and black pepper. Stir in bacon. Divide cream cheese among bell pepper halves. Garnish with more chives.
  2. Arrange 4 stuffed pepper halves, 8 strawberries, 6 olives, 4 carrots, and 2 oz chicken in each of 4 lunch boxes or storage containers. Refrigerate for up to 4 days.
  3. Serving size: 1 lunchbox
