You can't help but love a recipe that's perfect for two, doesn't require any cooking (as long as you're using some leftovers), and comes together in just minutes. Feel free to use mixed greens instead of the kale or grilled chicken instead of the shrimp to mix things up a bit.

Ingredients

Light Italian dressing

Curry powder

Table salt

Cooked frozen shrimp

8 oz, medium-size, peeled

Kale

3 cup(s), baby variety

Cooked quinoa

Apple

1 small, McIntosh or other crisp apple, cored, thinly sliced

Red onion

2 Tbsp, minced, thinly sliced

Instructions

  1. In large bowl, whisk together dressing, curry powder, and salt. Add shrimp, kale, quinoa, apple, and onion and toss to coat. Divide between 2 plates.
  2. Serving size: about 1 1⁄2 cups
