This gorgeous-looking, decadent salad is easy to make and takes just 15 minutes to put together. It's the perfect starter or side to any dinner party and will soon become one of your go-tos. You'll just love the fabulous threesome: nutty Parmesan cheese, juicy ripe pears, and candied nuts. It hits all the right flavor and texture profiles, and the recipe itself is endlessly riffable. The homemade salad dressing is equally fantastic. It's comprised of canned cranberry sauce, red-wine vinegar, olive oil, and Dijon mustard. Make extra so you can have some in the fridge at all times. Thinly sliced apples make a great substitute for the pears.


Ingredients
Canned cranberry sauce
½ cup(s), whole-berry or jellied
Red wine vinegar
2 Tbsp
Water
2 Tbsp
Olive oil
1 Tbsp
Dijon mustard
1 tsp
Table salt
⅛ tsp, or to taste
Black pepper
⅛ tsp, freshly ground, or to taste
Fresh mixed greens
8 cup(s)
Pear
3 medium, ripe but firm, cored and thinly sliced
Honey roasted almond
2 oz, walnuts or pecans (about 6 Tbsp)
Parmesan cheese
3 oz, shaved (use a microplane or vegetable peeler to get paper-thin shavings)

In a medium bowl, whisk together cranberry sauce, vinegar, water, oil and mustard; season to taste with salt and pepper.

Place greens in a large serving bowl. Add dressing, pears and nuts; toss to mix and coat. Scatter shaved Parmesan on top. Yields about 1 1/3 cups per serving.
