Serve this wrap with wild arugula salad with olive oil and lime vinaigrette.

Ingredients

avocado

½ item(s), medium, halved, pitted, and peeled

table salt

black pepper

fat free flour tortilla(s)

1 medium, spinach variety, (10-inch)

fresh spinach

1 cup(s), lightly packed

uncooked zucchini

1 small, shredded

reduced-fat feta cheese

¼ cup(s), crumbled

balsamic vinegar

olive oil

Instructions

  1. Mash together the avocado, salt, and pepper in a small bowl. Spread the mixture evenly on the tortilla. Top with the spinach, zucchini, and feta; drizzle with the vinegar and oil. Roll up the tortilla to enclose the filling. Cut the wrap in half. Yields 1/2 wrap per serving.
