This colorful, flavor wrap is the perfect lunch or snack for two. Simply mash together the avocado, salt, and pepper in a bowl and spread on the tortillas. Top with spinach, zucchini and carrot ribbons, and feta cheese, which are all drizzled with balsamic vinegar and a touch of olive oil. That's all you have to do to make this satisfying wrap. Feel free to use mixed greens or arugula instead of the spinach, onions instead of the zucchini, and goat cheese instead of feta cheese depending on your taste and what you have on hand. We think fresh tomatoes are the perfect accompaniment to this wrap if you want a prettier presentation.

Avocado

Fat free flour tortilla

Spinach

Uncooked zucchini
1 small, peeled into ribbons
Carrots
2 medium, peeled into ribbons
Reduced fat feta cheese

Mash together the avocado, salt, and pepper in a small bowl. Spread the mixture evenly on the tortilla. Top with the spinach, zucchini, carrots, and feta; drizzle with the vinegar and oil. Roll up the tortilla to enclose the filling. Cut the wrap in half. Yields 1/2 wrap per serving.
