This is a fiber-and-vitamin-filled treat for avocado lovers. It comes together in just 12 minutes, you don't need to cook anything, and it's super-satisfying and filling. Choose Haas avocados from California or Mexico, which have a smooth and creamy, full-flavored flesh. To remove the pit from an avocado, cut the avocado in half lengthwise and then twist the halves apart. With the blade of a large chef’s knife, make a quick downward stroke into the pit and twist. The pit should come out cleanly, attaching itself to the knife. Ta-da! If you don't like cilantro, feel free to use whatever fresh herbs you have on hand instead.

Tomato
1 small, diced
Red onion
2 Tbsp, chopped, minced
Cilantro
1 Tbsp, fresh, chopped
Red wine vinegar
1 Tbsp
Table salt
⅛ tsp
Avocado
2 item(s), ripe, pitted, cut in quarters, lengthwise then peeled
Light sour cream
4 tsp, fat free
Cilantro
1 cup(s), Cilantro sprigs optional

Combine the tomato, onion, cilantro, vinegar, and salt in a small bowl. Spoon the tomato mixture onto the avocado quarters. Top each quarter with about 1/2 teaspoon of the sour cream and a cilantro sprig (if using). Serve at once.
