This is a fiber-and-vitamin-filled treat for avocado lovers. Choose Haas avocados from California or Mexico, which have a smooth and creamy, full-flavored flesh.
Ingredients

fresh tomato(es)

1 small, diced

uncooked red onion(s)

2 Tbsp, chopped, minced

cilantro

1 Tbsp, fresh, chopped

red wine vinegar

1 Tbsp

table salt

2 item(s), medium, ripe, pitted, cut in quarters, lengthwise then peeled

light sour cream

4 tsp, fat free

cilantro

1 cup(s), Cilantro sprigs optional

Instructions

  1. Combine the tomato, onion, cilantro, vinegar, and salt in a small bowl. Spoon the tomato mixture onto the avocado quarters. Top each quarter with about 1/2 teaspoon of the sour cream and a cilantro sprig (if using). Serve at once.
Notes
To remove the pit from an avocado, cut the avocado in half lengthwise and twist the halves apart. With the blade of a large chef’s knife, make a quick downward stroke into the pit and twist. The pit should come out cleanly, attaching itself to the knife.
