No one will ever suspect that white beans replace some of the avocado. It's a great twist on the traditional classic that's perfect to make when you realize that you're short on avocados! Soaking the red onion in lime juice not only takes away some of the raw bite, it adds a whole different level of flavor too. All that's left to do is purée the rest of the ingredients, which include plum tomatoes, cilantro, garlic, and hot pepper sauce, in a food processor until blended. It really doesn't get much easier than that. You can serve this flavorful dip with baked tortilla chips and cut-up vegetables.

Ingredients

uncooked red onion(s)

½ cup(s), sliced, minced

fresh lime juice

3 Tbsp

canned white beans

15 oz, rinsed and drained

avocado

1 item(s), medium, peeled and chopped

plum tomato(es)

¼ cup(s), finely diced

cilantro

2 Tbsp, chopped

garlic clove(s)

1 medium clove(s), minced

table salt

½ tsp

hot pepper sauce

½ tsp

ground cumin

¼ tsp

Instructions

  1. In a small bowl, combine onion and lime juice; let stand 15 minutes.
  2. In a food processor, puree beans and avocado. Add the tomato, cilantro, garlic, salt, pepper sauce, cumin and the onion mixture, pulse until blended. Transfer to a serving dish and refrigerate, covered, until ready to serve.
