No one will ever suspect that white beans replace some of the avocado. The beans add wonderful texture and also give this guac a protein boost. Soaking the red onion in lime juice not only takes away some of the raw bite, it adds a whole different level of flavor, too.

Ingredients

Red onion

½ cup(s), sliced, finely chopped

Fresh lime juice

3 Tbsp

Canned white beans

15 oz, rinsed and drained

Avocado

1 item(s), chopped

Plum tomato

1 medium, chopped

Cilantro

2 Tbsp, chopped

Garlic

1 clove(s), finely chopped

Table salt

½ tsp

Hot pepper sauce

½ tsp

Ground cumin

¼ tsp

Instructions

  1. In a small bowl, combine onion and lime juice; let stand 15 minutes.
  2. In a food processor, puree beans and avocado. Add the tomato, cilantro, garlic, salt, pepper sauce, cumin and the onion mixture, pulse until blended. Transfer to a serving dish and refrigerate, covered, until ready to serve.
  3. Serving size: 1/3 cup

Notes

To keep the guacamole from browning, press a piece of plastic wrap directly onto the surface of the dip; this will keep out oxygen, the culprit in browning.
