No one will ever suspect that white beans replace some of the avocado. Serve this flavorful dip with baked tortilla chips and cut-up vegetables.
uncooked red onion(s)½ cup(s), sliced, minced
fresh lime juice3 Tbsp
canned white beans15 oz, rinsed and drained
avocado1 item(s), medium, peeled and chopped
plum tomato(es)¼ cup(s), finely diced
cilantro2 Tbsp, chopped
garlic clove(s)1 clove(s), medium, minced
table salt½ tsp
hot pepper sauce½ tsp
ground cumin¼ tsp
- In a small bowl, combine onion and lime juice; let stand 15 minutes.
- In a food processor, puree beans and avocado. Add the tomato, cilantro, garlic, salt, pepper sauce, cumin and the onion mixture, pulse until blended. Transfer to a serving dish and refrigerate, covered, until ready to serve.
