Asian Vegetable Salad

Mirin, a type of rice wine, is a staple in Japanese cooking. It's often used to add a touch of sweetness to sauces and glazes.
uncooked carrot(s)2 medium, julienned
fresh cherry tomato(es)7 medium, halved
cucumber(s)1 medium, peeled and sliced into 1/4-inch-thick half-moons
uncooked scallion(s)2 medium, chopped
vinegar1 Tbsp, rice
mirin½ fl oz, about 1 tbsp
garlic clove(s)1 clove(s), medium, minced
red pepper flakes¼ tsp, or 1/4 tsp minced red chili
ginger root½ tsp, minced
miso1 tsp, paste
- In a medium bowl, combine carrots, tomatoes, cucumber and scallions.
- In a separate bowl, mix together remaining ingredients and pour over salad. Let sit at least a half an hour before serving.
