We love this beautiful veggie-packed salad that takes less than 20 minutes to make and is ideal to serve for two. Feel free to scale up the ingredients if you're serving a crowd. The salad features julienned carrots, halved cherry tomatoes, sliced cucumbers, and chopped scallions. They're flavored with mirin, a type of rice wine, which is a staple in Japanese cooking. It's often used to add a touch of sweetness to sauces and glazes. The miso paste adds a touch of umami, while a sprinkle of red pepper flakes turns up the heat. You can increase or decrease the red pepper depending on your heat tolerance.

Ingredients

Carrots

2 medium, julienned

Cherry tomatoes

7 medium, halved

Cucumber

1 medium, peeled and sliced into 1/4-inch-thick half-moons

Scallions

2 medium, chopped

Vinegar

1 Tbsp, rice

Mirin

½ fl oz, about 1 tbsp

Garlic

1 clove(s), minced

Red pepper flakes

¼ tsp, or 1/4 tsp minced red chili

Fresh ginger

½ tsp, minced

Miso

1 tsp, paste

Instructions

  1. In a medium bowl, combine carrots, tomatoes, cucumber and scallions.
  2. In a separate bowl, mix together remaining ingredients and pour over salad. Let sit at least a half an hour before serving.
