This dessert is one of our favorite twists on a traditional apple pie. Vanilla ice cream is topped with spiced, cooked apples and crumbled cookies. It's delicious, sweet, comforting, and perfect to make when the leaves start changing color and you've enjoyed a trip out to the apple orchard. No one will be able to resist the combination of sweet apples, brown sugar, ground cinnamon and allspice, and crushed vanilla wafers. It's everything you love all in one bite. For added convenience, the apple topping can be made up to 2 days ahead and stored in the refrigerator. Keep some on hand for whenever you need a quick and easy dessert.

Ingredients

Granny Smith apple

4 large, peeled and diced (about 6 cups)

Dark brown sugar

2 Tbsp

Water

2 Tbsp

Fresh lemon juice

1 tsp

Ground cinnamon

1 tsp

Ground allspice

1 pinch(es)

Table salt

1 pinch(es)

Light vanilla ice cream

Instructions

  1. In a medium saucepan, toss apples with sugar, water, lemon juice, cinnamon, allspice and salt. Heat over medium heat, stirring frequently, until sugar dissolves; cover and cook until apples are softened and sauce has thickened, about 15 to 20 minutes. Remove from heat and let cool slightly.
  2. Spoon 1/3 cup ice cream into each of six small bowls; top each with 1/3 cup apples and 2 coarsely crushed cookies.
  3. Serving size: 1 sundae
