This is an impressive-looking rice pudding tart that is a surefire crowd-pleaser. And believe it or not, you can have it ready to go in about an hour. Along with salt, sugar, and cinnamon, all you need to make this recipe is almonds, milk, almond extract, cherries, and of course, arborio rice. The best part is that you can have the tart waiting in the fridge until you're ready to serve dessert. Also, springform pans, like the one used in this recipe, make cooking really easy! They have removable sides, so cakes you make can be easily flipped onto your serving platters.

Ingredients

Slivered almonds

3 Tbsp, toasted until golden

1% low fat milk

4 cup(s), (1%)

Uncooked arborio rice

1 cup(s), or other short grain rice

Ground cinnamon

tsp, or 1 cinnamon stick

Table salt

½ tsp

Sugar

½ cup(s)

Almond extract

½ tsp

Cherries

1½ cup(s)

Instructions

  1. Coat bottom and sides of a 9-inch springform pan with cooking spray. Spread toasted almonds in a single layer in bottom of pan. Set aside.
  2. In a heavy-bottomed saucepan, heat milk to boiling. Stir in rice, cinnamon and salt. Reduce to simmer and cook, stirring occasionally, 15 minutes. Add sugar and almond extract and cook, stirring often, 12 to 15 minutes longer or until rice is cooked through and mixture is thick.
  3. Gently spoon rice mixture into pan and spread evenly, keeping almonds intact on bottom. Cool to room temperature. Cover and refrigerate just until firm, about 40 minutes.
  4. To serve, remove sides of pan and invert tart onto serving plate. Lift off bottom of pan (almonds will now be imbedded on top of tart). Garnish with fresh cherries, slice into 8 pieces, and serve.
