canned pinto beans15 oz
cooked corn kernels8 oz
chopped green chili(es)2 Tbsp
chili powder1 Tbsp
WeightWatchers Reduced Fat Mexican style blend shredded cheese½ cup(s)
baked low fat tortilla chips8 oz
romaine lettuce2 cup(s), shredded, shredded
fresh tomato(es)1 medium, chopped
light sour cream¼ cup(s)
fat free salsa¼ cup(s), mild
olive(s)10 medium, chopped, pitted
cilantro2 Tbsp, chopped, fresh (optional)
- Combine the beans, corn, chiles, chili powder, and cumin in a medium nonstick saucepan. Cook over medium heat, stirring frequently, until hot. Stir in the cheese until melted.
- Arrange the tortilla chips on a large plate. Spoon the bean mixture over the chips, then top with the lettuce, tomato, sour cream, salsa, olives, and cilantro (if using). Serve at once.
