Air Fryer Spinach & Cheese Frittata

Your air fryer can be used in more ways than you may realize such as to make a two-person frittata. Just combine all the ingredients in a 6-inch round baking dish and set it in your air fryer to cook. You’ll end up with a light, veggie-packed meal that you can easily customize using the vegetables you have on hand.

Egg
4 large egg(s), whisked
Fat free skim milk
1 Tbsp
Dried oregano
½ tsp
Table salt
¼ tsp
Black pepper
⅛ tsp
Baby spinach
1 cup(s), roughly torn
Shallot
1 large, finely chopped (about 1/3 heaping cup)
Shredded reduced fat Mexican-style cheese blend
½ cup(s)
Cherry tomatoes
5 medium, halved
Garlic clove
1 clove(s), minced

Preheat air fryer to 325℉, if necessary. Coat a 6-inch round baking dish with cooking spray.

In a medium bowl, whisk eggs, milk, oregano, salt, and pepper. Gently stir in spinach, shallot, cheese, tomatoes, and garlic. Pour into prepared baking dish, and using a spatula or fork, press down on vegetables to submerge them in egg mixture.

Transfer to air fryer and cook until eggs are set, 21 to 23 minutes.
