The dry, constantly circulating heat of an air fryer helps you achieve the crispy texture that turns okra skeptics into okra converts. Here, the pods are cut in half lengthwise and tossed with a little oil and a combination of cornstarch and seasoning salt; the cornstarch provides a light coating, not a heavy breading, that aids in getting the okra crisp. You’ll definitely need to seek out fresh okra for this recipe; frozen okra cannot crisp up.
1 pound(s), fresh, trimmed and halved lengthwise
- In a large bowl, toss the okra with oil. In a small bowl, combine the cornstarch and seasoning salt. Sprinkle the cornstarch mixture over the okra mixture; toss well to coat.
- Preheat an air fryer, if necessary, to 400°F. Coat the air fryer basket with cooking spray. Arrange the okra in a single layer in the basket (half of the okra) and coat with cooking spray. Air-fry at 400°F until crisp and browned, 14 to 15 minutes, shaking basket halfway through cooking. Repeat the process with the remaining okra.
- Serving size: about ¾ cup
