Who doesn’t love a 4-ingredient dinner that cooks in one pan for minimal fuss and cleanup? This sausage and pepper saute is super easy and tasty, perfect on its own or served open-faced on a roll. It’s also delicious served over egg noodles or grits, a baked potato, cauliflower rice or spiralized veggies, or alongside a big salad. Swap in hot Italian sausage to turn up the heat. And add some sliced onions with the peppers to get in even more non-starchy veggies.

Sweet Italian sausage

Bell pepper

3 item(s), medium, 1 red, 1 yellow, 1 orange, thinly sliced

No sugar added fat free marinara sauce

1½ cup(s)

Shredded part skim mozzarella cheese

Instructions

  1. In a large, high-sided skillet, place the sausages and add enough water to cover them. Over medium-high heat, bring the water just to a boil and then immediately reduce it to a simmer; simmer until mostly cooked through, about 8 minutes. Drain and set aside on a cutting board to cool. When cool enough to handle, cut the sausages into thick slices.
  2. Clean and dry the skillet. Generously coat the skillet with cooking spray. Over medium heat, add the peppers, and cook, stirring, until they begin to soften and brown, about 6 minutes. Add the sausage slices and any liquid that’s accumulated on the board, and cook, stirring just once so the sausages begin to brown, about 2 minutes. Stir in the marinara, and reduce heat to low; cover, and cook for 10 to 15 minutes, until the sausages are cooked through and peppers are soft (uncover for the last 5 minutes if you’d like a slightly thicker sauce). Stir in the cheese, and serve.
