Instructions
1
Put the turkey, thyme, allspice and paprika in a bowl, season, then mix to combine and set aside.
2
Mist a large nonstick frying pan with cooking spray and cook the onion and peppers over a medium heat for 5 minutes until starting to soften. Add the turkey and cook for another 5-7 minutes until cooked through and golden. Transfer to a plate and wipe the pan clean with kitchen paper.
3
Mist the pan with more cooking spray. Put 1 tortilla wrap into the pan, scatter over a quarter of the cheese, then half the turkey mixture and another quarter of the cheese. Top with a second tortilla wrap. Cook for 2 minutes, pressing down on the tortilla with a spatula, then gently turn and cook on the other side for a final 2 minutes. Slide out of the pan, then repeat with the remaining tortillas, cheese and turkey mixture.
4
Cut each quesadilla in half and then cut each half into three wedges. Serve with the salad leaves and lime wedges on the side.
