The ultimate one-pan comfort food that’s perfect for lunch, dinner or a late-night snack. If you like things spicy, add a bit of chilli powder to the spice mix.

Ingredients

Turkey breast, skinless, raw

350 g, strips

Thyme, Dried

1½ teaspoon(s), level

Allspice

1½ teaspoon(s)

Paprika

1½ teaspoon(s), level

Calorie controlled cooking spray

8 spray(s)

Onion

1 large, thinly sliced

Green pepper

1 medium, deseeded and thinly sliced

Red pepper

1 medium, deseeded and thinly sliced

Tortilla wrap

4 large

Half fat Cheddar cheese

120 g

Salad leaves

4 portion(s)

Lime

1 medium, wedges, to serve

Instructions

  1. Put the turkey, thyme, allspice and paprika in a bowl, season, then mix to combine and set aside.
  2. Mist a large nonstick frying pan with cooking spray and cook the onion and peppers over a medium heat for 5 minutes until starting to soften. Add the turkey and cook for another 5-7 minutes until cooked through and golden. Transfer to a plate and wipe the pan clean with kitchen paper.
  3. Mist the pan with more cooking spray. Put 1 tortilla wrap into the pan, scatter over a quarter of the cheese, then half the turkey mixture and another quarter of the cheese. Top with a second tortilla wrap. Cook for 2 minutes, pressing down on the tortilla with a spatula, then gently turn and cook on the other side for a final 2 minutes. Slide out of the pan, then repeat with the remaining tortillas, cheese and turkey mixture.
  4. Cut each quesadilla in half and then cut each half into three wedges. Serve with the salad leaves and lime wedges on the side.

Notes

Use chicken breast strips instead of turkey. Save even more time by using 1 tablespoon fajita spice mix instead of the thyme, allspice and paprika.
