Crumbed turkey steaks are baked until crisp, then served on top of a garden salad with Parmesan in this classic Italian-style dish that makes a great weekend lunch.

Ingredients

Instructions

  1. Set a large dry frying pan over a low-medium heat. Add the breadcrumbs and toast for 4-5 minutes, shaking the pan regularly, until pale golden. Transfer to a plate to cool, then add the Parmesan, lemon zest and season.
  2. Prepare two shallow bowls, one with the flour and some seasoning, and the other with the egg and mustard lightly beaten together.
  3. Preheat the oven to 220°C, fan 200°C, gas mark 7. Line a large baking tray with baking paper. Dip a turkey steak in the seasoned flour until coated all over, then into the beaten egg and finally the breadcrumb mixture. Press lightly to cover. Transfer to the prepared tray. Repeat with the remaining steaks.
  4. Mist the steaks with cooking spray, then bake for 12-15 minutes, turning halfway through and misting with more cooking spray, until cooked through. Slice into strips.
  5. For the salad, toss the tomatoes, salad leaves and Parmesan together in a bowl. Drizzle over the balsamic vinegar and oil, and season well. Divide between plates, top with the turkey and serve.
