Ingredients

Turkey breast, skinless, raw
350 g
Onion
1 large
Garlic
2 clove(s)
Peppers, all types
1 medium
Chilli Powder
2 teaspoon(s), level
Tinned Tomatoes
400 g
Tomato Purèe
2 tablespoon(s), level
Kidney Beans, cooked

Vegetable stock cube
1 cube(s)
Salt
1 pinch
Brown Rice, dry

Instructions

Coat a large saucepan with cooking spray and heat. Add the turkey, a handful at a time, so that it seals and browns.

Add the onion, garlic, pepper, chilli powder, tomatoes, tomato puree, kidney beans and stock. Stir well, bring up to the boil, then cover and reduce the heat. Simmer for 30 minutes, stirring occasionally.

25 minutes before you're ready to serve, cook the rice in plenty of lightly salted boiling water until tender. Drain, then rinse with boiling water.

Season chilli with salt and pepper. Serve with rice.
