Chicken breast, skinless, raw

Reduced Fat Mayonnaise

Chipotle paste

Salad leaves

Heat a frying pan over a high heat. Squeeze ½ lime over the chicken fillets and season. Fry for about 5 minutes, turning once, until cooked through.

Toast the bread, then stir the mayonnaise and chipotle paste together.

Divide the salad and tomato slices, between 4 slices of toasted bread. Top with the chicken. Spread the other 4 slices of toast with the chipotle mayo and place on top, to serve.
