Butter

Fresh Chicken Stock

1800 ml

White pasta, dry

100 g

Cooked mixed vegetables

280 g

Tinned Tomatoes

1 can(s), large

Chicken breast, skinless, grilled

500 g

Vegetarian parmesan style hard cheese

1 tablespoon(s), grated

Lemon Juice, Fresh

2 teaspoon(s)

Chives, Fresh

1 tablespoon(s)

Instructions

Melt the butter in a large pot over a medium-low heat. Add the onion and a pinch of salt; cook for 10 minutes, stirring often, until the onion is soft and translucent.

Add the stock and bring to a boil. Stir in the pasta, frozen veg and tomatoes. Cook for 7-10 minutes until the pasta is al dente.

Season with salt and pepper. Stir in the chicken, cheese, lemon juice, chives and cook for 1 minute to heat through.
