Stir-fried mushroom noodles with hoisin sauce

Mushrooms
500 g
Rice Noodles, dry
180 g
Sesame Oil
1 teaspoon(s)
Cashew Nuts
60 g
Chilli Powder
1 teaspoon(s), level
Stir fry mixed vegetables
500 g
Hoisin Sauce
80 g
Coriander, fresh
4 teaspoon(s)
Instructions

Roughly chop the mushrooms.

Cook the noodles according to pack instructions.

Heat the oil in a wok and toast the walnuts for a few minutes. Remove from wok and roughly chop.

Fry the mushrooms with the chilli powder until they are browned. Add the vegetables and stir-fry for 5 minutes. Combine the drained noodles, cashews and hoisin sauce. Sauté for a few more minutes and garnish with coriander.
