White pasta, dry

Calorie controlled cooking spray

Back bacon, raw

Skimmed Milk

Parmesan Cheese

Parsley, fresh

Cook the pasta to pack instructions, or until al dente. Drain, reserving 100ml of the cooking water.

Meanwhile, set a large nonstick frying pan over a medium heat and mist with cooking spray. Add the bacon, mushrooms, spring onion and garlic, and cook for 5 minutes, until softened. Remove and discard the garlic.

In a mixing bowl, combine the soft cheese and egg, then stir in the bacon mixture, the milk, half of the Parmesan and the parsley. Season to taste. Put the spaghetti in a pan set over a low heat, add the cheese mixture and heat for 2-3 minutes, stirring, until the mixture has thickened. Add a little of the reserved pasta water to form a sauce.

Divide the spaghetti between 4 plates and serve topped with the remaining Parmesan.
