Smoky grilled sweetcorn salsa

Grilling the corn gives this salsa a smoky vibe

Ingredients

Corn on the cob, raw

3 medium

Calorie controlled cooking spray

4 spray(s)

Red onion

1 small, finely diced

Spring Onions

2 medium, finely sliced

Coriander, fresh

15 g, finely chopped

Lime Juice, Fresh

2 tablespoon(s)

Instructions

  1. Place a griddle pan over a medium heat until hot. Mist the corn cobs with cooking spray and place on the griddle. Cook for 10-12 minutes, turning often until the kernels are cooked and starting to brown. If you want a stronger BBQ flavour, you can try this on the coals. When cooked, set aside to cool.
  2. On a large chopping board, take a cob in one hand, hold it upright and run a sharp knife down the length of it. Keep the blade close to the core to better separate the kernels from the cob. Transfer the kernels to a bowl and repeat with the remaining cobs.
  3. Toss together the corn kernels, red onion, spring onions, coriander and lime juice. Season to taste and serve.
