In this piquant fish dish, thin raw salmon slices are marinated in a lime juice and olive oil mixture with red onion, chilli and red peppers.

Ingredients

Salmon, raw

300 g, fillet, skinned and thinly sliced

Lime

2 medium, zest from 1 and juice from both

Onion

1 small, red, thinly sliced

Red pepper

1 medium, deseeded and thinly sliced

Chilli, green or red

1 individual, deseeded and thinly sliced

Coriander, fresh

2 tablespoon(s)

Instructions

  1. Put the slices of salmon into a shallow non-metallic bowl. Add the lime zest and juice, tossing to coat. Cover and leave to marinate for 10 minutes.
  2. Add the red onion, pepper and chilli to the fish, tossing to coat. Cover and leave to marinate for a further 10-15 minutes.
  3. Serve, sprinkled with fresh coriander and seasoned with a little salt and plenty of black pepper.
