Roasted Tomato Salad

6 medium, halved lengthwise1½ tsp salt

2 tablespoon(s), (red wine)
2 teaspoon(s), heaped
50 g, coarsley chopped
50 g, crumbled
50 g, coarsely chopped
- Pre-heat oven to Gas Mark 4/180°C/350°F. Spray a medium baking dish with cooking spray.
- Place the tomatoes, cut-side up, in a single layer in the prepared dish. Sprinkle with the salt and lightly spray with cooking spray. Bake for 40 minutes or until lightly browned and tender.
- Meanwhile, combine the vinegar, oil and mustard in a small bowl. Place the tomatoes on a serving platter. Sprinkle with the combined herbs and feta, and drizzle with dressing. Serve.
