A tasty and colourful side dish that's ideal for barbecues or outdoor entertaining.

Ingredients

Calorie controlled cooking spray

Tomato

6 medium, halved lengthwise1½ tsp salt

Olive Oil

2 teaspoon(s)

Vinegar, All Types

2 tablespoon(s), (red wine)

Wholegrain Mustard

2 teaspoon(s), heaped

Basil, fresh

50 g, coarsley chopped

Feta Cheese

50 g, crumbled

Parsley, fresh

50 g, coarsely chopped

Instructions

  1. Pre-heat oven to Gas Mark 4/180°C/350°F. Spray a medium baking dish with cooking spray.
  2. Place the tomatoes, cut-side up, in a single layer in the prepared dish. Sprinkle with the salt and lightly spray with cooking spray. Bake for 40 minutes or until lightly browned and tender.
  3. Meanwhile, combine the vinegar, oil and mustard in a small bowl. Place the tomatoes on a serving platter. Sprinkle with the combined herbs and feta, and drizzle with dressing. Serve.
