6 medium
Olive Oil

Vinegar, All Types
2 tablespoon(s)
Wholegrain Mustard
2 teaspoon(s), heaped
Basil, fresh
50 g
Feta Cheese
50 g
Parsley, fresh

Instructions

Pre-heat oven to Gas Mark 4/180°C/350°F. Spray a medium baking dish with cooking spray.

Place the tomatoes, cut-side up, in a single layer in the prepared dish. Sprinkle with the salt and lightly spray with cooking spray. Bake for 40 minutes or until lightly browned and tender.

Meanwhile, combine the vinegar, oil and mustard in a small bowl. Place the tomatoes on a serving platter. Sprinkle with the combined herbs and feta, and drizzle with dressing. Serve.
