Pancake Day is one of our favourite times of year. Whether you like yours thin and crispy or fat and fluffy, pancakes are the on-trend food to try, which means there’s more inspiration out there than ever. And yes, you can have chocolate syrup on top!


Ingredients
Banana
4 medium
Egg, whole, raw
2 medium, raw
Baking powder
¼ tablespoon(s), level
Peanut butter powder
12 g
Calorie controlled cooking spray
4 spray(s)
Low calorie chocolate shot liquid
2 tablespoon(s)
Unsalted Peanuts

Instructions

Put the mashed banana in a bowl. Whisk the eggs in a jug then add to the banana along with the baking powder and peanut butter powder, whisking until the mixture is smooth and combined.

Heat a large nonstick frying pan over a medium-high heat and mist with cooking spray. Add 3-4 spoonfuls of mixture at a time and cook for 2 minutes, until the pancakes feel firm and develop dark spots, then flip and cook for another 2 minutes. Transfer to a plate and keep warm. Repeat with the remaining mixture to make 12 pancakes.

Serve three pancakes per person topped with the banana slices, chocolate syrup and peanuts.
