Pasta with broccoli, chilli & sausage
Wholewheat Pasta, dry
1 portion(s), medium, broken into florets

1 small, red, chopped
Reduced fat pork sausages, grilled
2 clove(s), crushed
300 g, halved
- Cook the pasta according to pack instructions, adding the broccoli 4–5 minutes before the end of cooking time. Drain, reserving a cup of the cooking water.
- Meanwhile, heat a large frying pan and mist with cooking spray. Add the onion and squeeze the sausagemeat out of the sausage skins in about 5 pieces per sausage, straight into the pan. Season and cook for 5–6 minutes, stirring, until browned. Add the garlic and tomatoes and continue cooking until the sausage pieces are cooked through and the tomatoes have softened.
- Add the chilli flakes and a good splash of the reserved cooking water then stir the drained pasta and broccoli in, coating everything well with the tomato mixture. Divide between 2 pasta bowls and serve.
