Ingredients

Lamb Leg Steak, Lean, Boneless, raw

225 g, cut into thin strips

Calorie controlled cooking spray

5 spray(s)

Root Ginger

1 teaspoon(s), 1.25cm, grated

Soy Sauce

2 tablespoon(s)

Garlic

2 clove(s), minced

Egg noodles, dry

150 g, cook according to packet instructions

Sugar Snap Peas

100 g

Pak Choi

2 portion(s), or Chinese leaf, shredded

Spinach

1 portion(s), (handful), or chard

Beansprouts

50 g

Radish

3 medium, finely sliced

Red pepper

1 medium, deseeded and finely slicedFor the dressing:

Coriander, fresh

2 tablespoon(s), chopped

Basil, fresh

2 tablespoon(s), chopped

Chilli, green or red

1 individual, (use red), deseeded and finely chopped

Soy Sauce

2 teaspoon(s)

Instructions

  1. In a large hot non-stick wok or saucepan fry lean lamb leg steaks, in low fat cooking spray until browned, approx 3-4 minutes.
  2. Add root ginger, soy sauce and garlic, cook for 1-2 minutes then keep warm. Add precooked noodles, sugar snap peas and pak choi or Chinese leaf, spinach or chard, beansprouts, radishes and red pepper. Toss together and place in a large salad bowl.
  3. To make the dressing: Mix together fresh coriander leaves, basil, chilli and soy sauce.

Notes

Toss all ingredients together, drizzle with dressing and serve with crispy noodles.
