One-pot chicken with tomato rice

Onion

Garlic

Basmati rice, microwavable
2 pouch(es), cooked
Tinned Tomatoes
1 can(s), large
Sun Dried Tomatoes

Basil, fresh

Instructions

Mist a large nonstick frying pan with cooking spray and brown the chicken over a medium heat for 3-4 minutes each side. Remove from the pan and set aside.

Mist the pan with more cooking spray, then fry the onion for 5 minutes. Add the garlic, paprika and dried herbs, then cook, stirring, for 1 minute. Add the rice, chopped tomatoes and sun-dried tomatoes; stir to combine. Season well.

Arrange the chicken on top of the rice mixture, then cover with a lid and cook over a medium heat for 12-15 minutes, or until the meat is cooked and the rice tender. Remove the chicken from the pan and cut into thick slices.

Serve the rice topped with the chicken and garnished with the basil and paprika.
