One-pot chicken with tomato rice

Chicken breast, skinless, raw
1 large, finely chopped
2 clove(s), crushed
2 teaspoons, level, smoked paprika, plus extra to serve

Ben's Original Microwavable Basmati Rice
1 can(s), large
Sun Dried Tomatoes
75 g, drained & roughly chopped
10 leaf/leaves, to serve
- Mist a large nonstick frying pan with cooking spray and brown the chicken over a medium heat for 3-4 minutes each side. Remove from the pan and set aside.
- Mist the pan with more cooking spray, then fry the onion for 5 minutes. Add the garlic, paprika and dried herbs, then cook, stirring, for 1 minute. Add the rice, chopped tomatoes and sun-dried tomatoes; stir to combine. Season well.
- Arrange the chicken on top of the rice mixture, then cover with a lid and cook over a medium heat for 12-15 minutes, or until the meat is cooked and the rice tender. Remove the chicken from the pan and cut into thick slices.
- Serve the rice topped with the chicken and garnished with the basil and paprika.
