It’s hard to resist the hors d’oeuvres at a party, but making your own needn’t be tricky. These little snacks are tasty, quick and – best of all – 1 SmartPoint® or less each!

Ingredients

Peas, fresh or frozen

150 g

Medium fat soft cheese

40 g

Mint, Fresh

½ tablespoons, finely chopped

Lemon(s)

½ zest(s) of 1

Lemon Juice, Fresh

1 teaspoons

Lettuce

4 leaf/leaves, small

King Prawns, Cooked

180 g

Chilli flakes

¼ teaspoons, level

Instructions

  1. Defrost the frozen peas, then blitz in a mini food processor (or use a bowl and a stick blender) with the medium-fat soft cheese, mint, lemon zest and lemon juice. Season well.
  2. Take 4 small Little Gem lettuce leaves, cut each into 3 pieces, then spoon in the pea mixture. Top with the cooked king prawns and squeeze over a little extra lemon juice. Sprinkle over chilli flakes to serve.
