1 medium, 1 tbsp required, minced
- Bring 1 to 2 inches of water to a boil in a medium frying pan. Place asparagus in pan, reduce heat to medium and cook until asparagus are crisp-tender, about 6 to 8 minutes; drain well.
- Place asparagus in a large glass bowl. In a cup, combine broth, ginger, lemon juice, spring onions, salt and pepper; pour over asparagus. Set aside for 30 minutes to marinate.
