This lemon-ginger marinade is also excellent with broccoli. Cook it as you would the asparagus.

Ingredients

Asparagus, raw

600 g, tough ends snapped off

Baxters Favourites Chicken Broth

40 g, 2 tbsps, required, low-fat

Root Ginger

½ teaspoon(s), fresh

Lemon Juice, Fresh

1 teaspoon(s), fresh

Spring Onions

1 medium, 1 tbsp required, minced

Salt

¼ teaspoon(s)

Black pepper

¼ teaspoon(s)

Instructions

  1. Bring 1 to 2 inches of water to a boil in a medium frying pan. Place asparagus in pan, reduce heat to medium and cook until asparagus are crisp-tender, about 6 to 8 minutes; drain well.
  2. Place asparagus in a large glass bowl. In a cup, combine broth, ginger, lemon juice, spring onions, salt and pepper; pour over asparagus. Set aside for 30 minutes to marinate.

Notes

This recipe can be doubled or tripled for larger gatherings.
