Lemon-Ginger Asparagus

This lemon-ginger marinade is also excellent with broccoli. Cook it as you would the asparagus.

Asparagus, raw
600 g
Baxters Favourites Chicken Broth
40 g
Root Ginger
½ teaspoon(s)
Lemon Juice, Fresh
1 teaspoon(s)
Spring Onions
1 medium
Salt
¼ teaspoon(s)
Black pepper
¼ teaspoon(s)
Instructions

Bring 1 to 2 inches of water to a boil in a medium frying pan. Place asparagus in pan, reduce heat to medium and cook until asparagus are crisp-tender, about 6 to 8 minutes; drain well.

Place asparagus in a large glass bowl. In a cup, combine broth, ginger, lemon juice, spring onions, salt and pepper; pour over asparagus. Set aside for 30 minutes to marinate.
