Italian-style griddled baby courgettes

600 g, baby, halved lengthways
Calorie controlled cooking spray
Lemon Juice, Fresh
1 tablespoon(s), plus wedges to serve
Vegetarian parmesan style hard cheese
40 g, shaved
- Set a griddle pan over a high heat. Mist the courgettes with cooking spray and season. When the pan is smoking, cook the courgettes for 5 minutes on each side until charred and tender (you may have to do this in batches).
- Transfer the courgettes to a serving plate and squeeze over the lemon juice. Scatter over the cheese and serve with lemon wedges.
If you can’t find baby courgettes, use regular varieties cut into 2-3cm strips.
