Grilled lamb steaks with honeyed carrots

Ingredients
New potatoes, raw
500 g
Calorie controlled cooking spray
4 spray(s)
Lamb Leg Steak, Lean, Boneless, raw
480 g
Coriander, Dried
2 teaspoon(s), level
Olive Oil
2 teaspoon(s)
Baby carrots, raw
300 g
Honey
3 teaspoon(s), level
Green Pesto
2 tablespoon(s), level
Instructions

Put a large griddle pan over a high heat to preheat. Put the potatoes in a microwave-proof dish. Cover and cook on high for 8-10 minutes, or until tender.

Meanwhile, mist the lamb with the cooking spray and sprinkle with the coriander. Put the steaks in the griddle pan and cook for 3-4 minutes each side or until cooked to your liking. Transfer the steaks to a plate, cover with foil and set aside to rest for 2 minutes

Meanwhile, heat the garlic-infused oil in a large nonstick frying pan over a medium heat. Add the carrots and cook, turning occasionally, for 5-6 minutes or until tender. Add the honey and toss to coat.

Top the lamb with the pesto and serve with the carrots and potatoes
