Grilled lamb steaks with honeyed carrots

- Put a large griddle pan over a high heat to preheat. Put the potatoes in a microwave-proof dish. Cover and cook on high for 8-10 minutes, or until tender.
- Meanwhile, mist the lamb with the cooking spray and sprinkle with the coriander. Put the steaks in the griddle pan and cook for 3-4 minutes each side or until cooked to your liking. Transfer the steaks to a plate, cover with foil and set aside to rest for 2 minutes
- Meanwhile, heat the garlic-infused oil in a large nonstick frying pan over a medium heat. Add the carrots and cook, turning occasionally, for 5-6 minutes or until tender. Add the honey and toss to coat.
- Top the lamb with the pesto and serve with the carrots and potatoes
