Cinnamon-apple baked oats

The grated apple in the oat mixture adds a little crunchy texture and lots of sweetness. Though we call for berries as the topping, you can use any fruit you have on hand - try sliced bananas, peaches or diced pears.

Ingredients

Porridge oats

180 g

Ground Cinnamon

2 teaspoon(s), level

Baking powder

1 teaspoon(s), level

Egg, whole, raw

3 medium, raw

Skimmed Milk

300 ml

Honey

2 tablespoon(s), level

Vanilla Extract

1 teaspoon(s), level

Apple

2 medium

Pecan Nuts

50 g

Frozen Mixed Berries

Instructions

Preheat the oven to 200°C, fan 180°C, gas mark 6.

In a large bowl, stir together the oats, cinnamon, baking powder and a pinch of salt.

In a medium bowl whisk together the eggs, milk, honey, vanilla and 150ml water. Stir the egg mixture into the oat mixture, then fold in the grated apple.

Transfer the mixture to a 22cm x 14cm baking dish and scatter over the pecans. Bake uncovered for 25-30 minutes until set. Cut into 6 pieces and serve warm with the berries.
