Caesar salad dressing

This dressing’s tangy and rich, terrific tossed with romaine and croutons but also wonderful as a dipping sauce.


Ingredients
Egg, whole, raw
2 medium, raw
Anchovies, raw (not in oil)
6 individual
Lemon Juice, Fresh
5 tablespoon(s)
Fresh Chicken Stock
60 ml
Dijon Mustard
2 teaspoon(s), level
Garlic
1 clove(s)
Olive Oil
50 ml
Parmesan Cheese
6 tablespoon(s), grated
Instructions

Bring a small pot of water to a boil, turn off heat and carefully add the eggs to the pot. Let the eggs stand in hot water for 4-5 minutes; cool under cold, running water.

Meanwhile, place the anchovies, lemon juice, stock, mustard, garlic in bowl of a food processor, season with salt and pepper, then process until a thick dressing forms. Add the eggs, process until incorporated.

Pour oil into dressing in a steady stream, whisking to combine. Add cheese; blend thoroughly. Yields about 1 tablespoon per serving.
