Butternut squaffles

Calorie controlled cooking spray
4 spray(s)
Cherry Tomatoes

Chorizo Sausage
30 g
Egg, whole, raw
1 medium, raw
Instructions

Preheat the oven to 200°C, fan 180°C, gas mark 6. Put 3 butternut squaffles in a baking tray and mist with cooking spray. Add some vine cherry tomatoes to the tray and bake for 20 minutes.

Meanwhile, dry fry sliced chorizo until crisp and poach an egg in a pan of simmering water for 3-4 minutes. Serve the squaffles topped with chorizo, tomatoes and egg, garnished with parsley.
