Banana

1 medium

Porridge oats

40 g

Baking powder

0.5 teaspoon(s), level

Vanilla Extract

0.5 teaspoon(s), level

Egg white, raw

2 individual

Smooth Peanut Butter

1 teaspoon(s)

Raspberries

Preheat the oven to 180°C, fan 160°C, gas mark 4. Cut the banana in half; mash one half with a fork and slice the other half into thin rounds.

Combine the oats, baking powder and mashed banana in a bowl. Stir in the vanilla extract and egg whites.

Pour the mixture into a 12cm ramekin or ovenproof baking dish. Top with the banana slices and bake for 20 minutes or until golden and just firm.

Serve topped with the raspberries and peanut butter.
