Start your fireworks party off with a bang with these simple baked apples.

Ingredients

Cranberries

100 g, fresh

Root Ginger

1 teaspoon(s)

Artificial sweetener

3 tablespoon(s)

Apple

2 medium, cooking

Ginger Beer

150 ml

0% fat natural Greek yogurt

4 tablespoon(s), to serve

Instructions

  1. Preheat the oven to 180ºC, fan 160ºC, Gas Mark 4. In a bowl, mix the cranberries with the ginger and sweetener.
  2. Slice the apples in half widthways and remove the cores. Place in a baking dish and stuff the centres with the cranberry mixture. Pour over the ginger beer or ale and bake in the oven for about 30 minutes or until the apples are soft, basting them with the ginger juice halfway through.
  3. Serve each apple half with some juice and a tablespoon of Greek yogurt.
