Notes

Preheat oven to 200°C. Spray wedges with olive oil and sprinkle with cajun seasoning and season with salt and pepper. Roast until golden. Rub fish with garlic, lemon rind and thyme. Spray with olive oil and grill for 2-3 minutes each side, or until cooked. Toss salad with dressing and serve.
