Mild cod fillets cook perfectly in this recipe. The key is to preheat the skillet for a few minutes on the grill so that the fish doesn’t hit a cold pan. A small amount of butter enhances the cod, giving it a crab-like sweetness that’s complemented beautifully with an herby gremolata topping.

Cooking spray

Uncooked Atlantic cod

24 oz, 4 [6-oz] fillets

Regular butter

1½ tbsp(s), melted

Fresh parsley

¼ cup(s), finely chopped

Lemon zest

1 tsp(s)

Garlic clove(s)

1 clove(s), large, grated

Instructions

  1. Preheat an outdoor grill to medium-high heat (about 425°F). Place a cast-iron skillet on the grill rack, close the lid, and preheat the pan for 5 minutes.
  2. In a small bowl, combine the salt, black pepper, garlic powder, and paprika. Coat both sides of the fillets with cooking spray; sprinkle the top of the fillets evenly with the spice mixture. Carefully add the fillets to the hot skillet on the grill; drizzle with the butter. Close the grill lid; cook until the fish flakes easily when tested with a fork, 8 to 10 minutes.
  3. In a small bowl, combine the parsley, lemon zest, and garlic; sprinkle evenly over the fillets.
  4. Serving size: 1 fillet and 1 tbsp gremolata
