Our slimmed-down version of meatloaf substitutes a mix of ground turkey and turkey breast for the fattier beef-pork-veal combination served up at the corner diner.

Uncooked 99% fat-free ground turkey breast

Seasoned breadcrumbs

Preheat the oven to 200°C (400°F). Place the oven rack in the centre of the oven. Spray a baking sheet with cooking spray.

Spray a large non-stick skillet with cooking spray and set over medium heat. Add the onion and bell pepper; cook, stirring occasionally, until softened, about 5 minutes. Remove from the heat and let cool 10 minutes.

Blend together the ground turkey and turkey breast, the onion mixture, 125 ml (½ cup) of the ketchup, the bread crumbs, egg white, mustard, Worcestershire sauce, garlic powder, salt and pepper in a large bowl. Transfer the mixture to the baking sheet and shape into a 12.5x25-cm (5×10-in) loaf, about 6.25 cm (2½ in) thick. Spread the remaining 125 ml (½ cup) ketchup over the top of the meatloaf.

Bake until a thermometer inserted into the centre of the meatloaf registers 75°C (165°F), about 45 minutes. Remove from the oven and let stand 10 minutes before slicing.
