Preheat oven to 350ºF. Place one tortilla on a baking sheet coated with cooking spray. Top with tomato, pepper and cheese. Sprinkle with cilantro and cover with other tortilla. Bake until cheese melts. Serve topped with guacamole and save the grapes for dessert.
