Notes

Preheat broiler. Meanwhile, coat a medium saucepan with cooking spray; sauté onion in saucepan until tender, about 3 minutes. Add broth to saucepan and heat through. Pour soup into a 2-cup ovenproof bowl and place potato slice over soup; top with slice of cheese. Place bowl on small baking sheet. Broil soup 4 inches from heat source for 1 minute or until cheese melts.
