For the best flavor, look for a smoked turkey breast that’s still on the bone. We call for a serrano chile, but you can also use a jalapeño.

Ingredients

cooked turkey breast with skin

½ pound(s), smoked turkey, chopped

plum tomato(es)

4 medium, diced

cilantro

¼ cup(s), chopped

garlic clove(s)

4 medium clove(s), peeled

uncooked red onion(s)

1 small, diced

serrano chile(s)

1 average, seeded and minced (wear gloves to prevent irritation)

fresh lime(s)

1 medium, Juice of 1 lime

fresh oregano

2 tsp, chopped, fresh

table salt

½ tsp

corn tortilla(s)

6 medium, soft

lettuce

3 cup(s), chopped, mesclun

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, combine the turkey, tomatoes, and cilantro; press in the garlic with a garlic press. Stir in the onion, serrano chile, and lime juice, then the oregano and salt.
  3. Place the tortillas directly onto the middle oven rack and bake until toasted, 5–6 minutes. Transfer to plates; top with the mesclun and the turkey mixture.

Notes

If you have a toaster oven, the tortillas can be toasted in it for the same number of minutes as in a regular oven.
